๐ฝ๏ธ A superb evening in City View tonight with a menu โ and a sunset โ to match! ๐ฝ๏ธ๐
It was also a pleasure to welcome the Bexleyheath and Crayford WI, who made the most of the beautiful evening by taking some fabulous photos out on our stunning terrace ๐ธโ๏ธ๐ธ
Tonightโs menu highlights included a vibrant red and green pepper veloutรฉ ๐ซ๐ฅฃ and beautifully seared scallops with pickled fennel ๐โจ
For the mains, guests enjoyed rump steak with butternut purรฉe and minted peas ๐ฅฉ๐ฟ, a colourful beetroot tartlet ๐ฑ๐ , a spectacular salmon served three ways ๐๐ฅ, and delicate chestnut gnocchi with wild mushroom veloutรฉ ๐๐
Desserts truly stole the show, with a mouthwatering blackberry and vanilla mille-feuille ๐๐ฐ and an indulgent chocolate truffle torte ๐ซโจ
A huge thank you to the WI for joining us this evening, and another massive well done to our fabulous Level 3 Hospitality and Catering students for delivering another fantastic service ๐๐จโ๐ณ๐

๐ฝ๏ธโจ Last but absolutely not least, today it was Alexโs turn to lead the kitchen โ and she did so with calmness, confidence and efficiency during another fully booked service at City View! ๐จโ๐ณ๐๐ฅ
Alex delighted guests with a rich and creamy mushroom soup ๐๐ฅฃ and beautifully prepared potato dumplings ๐ฅโจ. A real standout of the lunch menu was her juicy chicken ballotine stuffed with spinach and cheese ๐๐ง๐ฅฌ, alongside a perfectly cooked sea bass served with saffron risotto ๐๐๐ฟ
Desserts were equally impressive, with guests treated to an indulgent chocolate fondant ๐ซ๐ฅ and a stunning lemon meringue tart ๐๐ฅงโ๏ธ
What a fantastic way to finish the season! ๐๐ฝ๏ธ๐ A huge well done to all of our Level 3 students for what has perhaps been our best and busiest year yet ๐๐ฅณ๐จโ๐ณ Your creativity, professionalism and hard work throughout the season have been incredible to watch.

๐ฝ๏ธโจ This week it was Amyโs turn to design and produce her very own stunning menu! โจ๐ฝ๏ธ
Amy brought some incredibly unique flavours and exotic pairings to City View โ combinations weโve never seen before, and thatโs exactly what this assignment is all about! ๐๐ Creativity, confidence and showcasing individual culinary style.
Guests were treated to a rich and comforting bone broth egg drop soup ๐ฒ๐ฅ alongside a beautifully crafted Gruyรจre and onion tart finished with honey ๐ง๐ฏ
For the mains, diners enjoyed flavour-packed turkey kofta served with tahini sauce and homemade pitta ๐ฏโจ, red mullet with a bold and vibrant garlic chilli oil ๐๐ถ๏ธ๐ง, or a creamy pea risotto with shallots and mascarpone ๐ฑ๐
Desserts were equally impressive, featuring the always-entertaining chocolate fondant with miso caramel ๐ซ๐ฅ and a vibrant vanilla panna cotta with strawberry coulis ๐๐จ
Despite an incredibly busy service, Amy kept the kitchen cool, calm and organised throughout ๐ฉโ๐ณ๐ receiving fantastic feedback from guests for both the food and service.

Itโs that exciting time of year when our Level 2 hospitality students embark on one of the most challenging and rewarding parts of their qualification โ tableside silver service ๐ฝ๏ธ๐
Students are developing the skills to serve soups, sauces and a variety of desserts and puddings at the table, demonstrating precision, professionalism and confidence in front of guests.

๐๐ค An Absolutely Incredible Annual Employers Event! ๐ค๐
This evening we hosted a fantastic and diverse array of employers, all ready to support a new cohort of students with exciting work experience placements to help them achieve their Level 3 qualifications next year ๐โจ
It was our pleasure to welcome back our valued and long-standing industry partners, including Brasserie Zรฉdel and Manzi's from The Wolseley Hospitality Group, alongside the ever-supportive Tudor Barn Eltham. We were also delighted to see familiar faces from Slade Cafe and Cakes & Layers once again ๐ฝ๏ธโ๐ฐ
We were equally excited to welcome new prospective placement providers including Globetrotters Soft Play, David Lloyd Clubs, and foodservice leaders Bidfood ๐๏ธ๐ด
And a special thank you also goes to the wonderful charities we continue to collaborate with, Roots for Life and Homestart Woolwich.
Most importantly, our students had the opportunity to speak directly with employers, build valuable connections and begin forming relationships that could support their future careers and progression into industry ๐๐ผ

๐๐ฝ๏ธ An Unforgettable Industry Experience for Our Level 3 Students! ๐ฝ๏ธ๐
Today, our Level 3 students were treated to a truly stupendous behind-the-scenes experience at the prestigious Monkey Island Estate โ a luxurious 5-star boutique hotel in Bray, Maidenhead, known for hosting spectacular events, including royal celebrations and celebrity weddings ๐โจ
Our Catering students had the incredible opportunity to go behind the scenes in the kitchen, supporting preparations for a busy lunch service alongside Executive Head Chef Daniel ๐จโ๐ณ๐ฅ
Meanwhile, our Front of House Hospitality students enjoyed a bespoke tour and an insightful Q&A session with Events Manager Kevin and Food & Beverage Manager Renato, gaining valuable knowledge about high-end service and event management ๐ฅ๐ผ
As if that wasnโt enough, the group were then treated to an absolutely outstanding 3-course fine dining experience, featuring dishes they had helped to prepare themselves โ a truly rewarding and inspiring moment ๐ฝ๏ธ๐

๐ฅ๐ฝ๏ธ An AMAZING and absolutely JAM-PACKED fine dining evening at City View tonight! ๐ฝ๏ธ๐ฅ
Tonight, our catering students focused on the intricacies of cooking steak to the correct temperature and the importance of resting, developing essential professional skills โ and it truly paid off! ๐ฅฉโฑ๏ธ๐
Guests were absolutely delighted by a superb menu, beginning with a rich mushroom and tarragon soup ๐๐ฅฃ, followed by flavour-packed confit duck croquettes with pickled carrot and orange gel ๐ฆ๐ฅ๐
The main course was the true showstopper of the evening, featuring perfectly cooked sirloin steak with bรฉarnaise sauce, triple-cooked chips and grilled vegetables ๐ฅฉ๐๐ฅฆ, alongside a beautifully balanced crispy skin salmon with pea risotto ๐๐ฑ๐ or a vibrant beetroot Wellington ๐ฟ๐
Desserts were just as impressive, with guests enjoying a light and refreshing strawberry and elderflower cheesecake ๐๐ฐ or an indulgent chocolate crรฉmeux with raspberry coulis ๐ซ๐
All of this was perfectly complemented by beautiful tropical berry cocktails, created and served by our talented students ๐นโจ

๐ฝ๏ธโจ Today it was Krayโs turn to lead the kitchen, delivering a beautiful menu built around classic flavours and well-balanced pairings โจ๐ฝ๏ธ
The kitchen ran calmly and professionally throughout a very busy service, with guests leaving fantastic feedback and thoroughly enjoying the experience ๐๐
Highlights included a vibrant beetroot and goatโs cheese salad with candied walnuts and a comforting roast chicken broth to start ๐ฅ๐.
For mains, diners enjoyed braised lamb served with saffron pilaf and homemade naan ๐ฅฉ๐, pan-seared salmon with fondant potatoes ๐๐ฅ, or a delicious wild mushroom and spinach Wellington ๐๐ฅฌ.
Desserts were equally impressive, with a silky vanilla panna cotta and poached pear with almond crumb ๐๐จ
It was a packed restaurant and an incredibly successful service โ we were so busy we didnโt manage to take many photos, but more will be shared later in the week! ๐ธ

Today our Level 2 Hospitality & Catering students enjoyed their annual trip to Borough Market!
They kicked things off with a fun challenge before exploring everything the market has to offerโand of course, sampling some delicious pasta from Padella ๐
There were plenty of sweet treats along the way too, including cannoli, babka, cookies and more!
With a little time to spare, we made a spontaneous visit to Threadneedles Hotel, where students learned about the buildingโs history and had a behind-the-scenes tour of the restaurant and kitchens.
A fantastic day full of learning, great food, and new experiences!

Krayโs Menu is our next Level 3 student-led experience at the City View Kitchen. The menu has been carefully planned, with the kitchen team working together to produce some fantastic dishes.
To start, enjoy a comforting **roasted chicken & herb broth**, a vibrant **beetroot and goatโs cheese salad**, or a fresh **tomato & avocado tartar.
For mains, choose from **slow braised spiced lamb**, a perfectly **pan-seared salmon with a dill veloutรฉ sauce**, or our vegetarian option, a delicious **wild mushroom, lentil & spinach Wellington**.
To finish, indulge in a smooth **vanilla panna cotta** or a delicate **poached pear with almond crumb**.

๐ฝ๏ธ๐ฅ Today it was Sonnyโs turn to lead the kitchen, and he certainly delivered a menu full of creativity, confidence and bold flavour combinations! ๐ฅ๐ฝ๏ธ
Guests were wowed by Sonnyโs unique take on nachos, topped with a delicious chorizo crumb and pickled red onion ๐ฎ๐ง
๐ถ๏ธ. His creative pairing of salmon with a coconut and white wine sauce also received rave reviews ๐๐ฅฅ๐ท, showing real flair and imagination in the kitchen.
Perhaps the true showstopper of the day was Sonnyโs stunning deconstructed strawberry sundae ๐๐จโจ Complete with a perfect homemade vanilla ice cream, it looked and sounded like something created by a professional chef.
Sonny led his service with confidence and creativity, producing dishes that impressed both guests and staff alike. ๐๐ Well done, Sonny โ another fantastic addition to our Level 3 Menu Season!

๐ฝ๏ธ๐ฅโจ A hugely successful fine dining evening tonight as City View returned after the Easter break! โจ๐ฅ๐ฝ๏ธ
With a jam-packed restaurant full of guests, it was wonderful to see so many members of the Shooters Hill community joining us for dinner this evening ๐ซโค๏ธ
Guests were treated to a delicious menu featuring a creamy leek and potato veloutรฉ ๐ฅ๐ฅฃ, followed by a fresh and vibrant citrus seafood ceviche ๐ฆ๐๐.
For the main course, diners enjoyed a choice of tender braised short rib with smooth garlic mash ๐ฅฉ๐ง๐ฅ, perfectly seared sea bass with spring pea purรฉe ๐๐ซ, or roasted butternut gnocchi ๐ ๐.
To finish, guests were thoroughly spoiled with a rich salted caramel and dark chocolate tart ๐ซ๐ฏ, a delicate lemon and elderflower posset ๐๐ผ, or a refreshing fresh fruit salad ๐๐๐๐.

Sonny is our next Level 3 student to run the City View Kitchen. He has planned the menu, organised the orders, and will be Head Chef, leading his brigade of chefs to produce some fantastic dishes.
To start, enjoy a warming spiced lentil and carrot soup, tuck into some Mexican-style nachos, or treat yourself to a classic Eggs Royale.
For mains, choose from tagliatelle in a pork and tomato Bolognese sauce, served with garlic ciabatta, or a delicious honey glazed salmon with coconut rice, accompanied by grilled vegetables and white wine jus. Our vegetarian option is a flavourful minted pea risotto.
To finish, indulge in a deconstructed ice cream sundae, a rich and creamy tiramisu, or a refreshing fresh fruit salad.

Today it was Victorโs turn to take charge of the kitchen, leading a busy and bustling restaurant service with confidence, calmness and professionalism. With City View full of guests eager to sample his menu, Victor delivered a fantastic dining experience and received some wonderful feedback from customers. ๐โจ
Guests were spoilt with a rich and comforting broccoli and Stilton soup or a beautifully prepared fresh scotch egg served with crisp apple slaw.
For the main course, Victor impressed diners with a vibrant beef stir fry with freshly made noodles, a delicate lemon sole piccata served with black rice, or a hearty and flavour-packed butternut squash lasagne.
To finish, guests were treated with a choice of indulgent Baileys chocolate mousse or a traditional steamed sultana pudding ๐ซ๐ฎ
Victor led the kitchen brilliantly throughout a very busy service, showing real skill, organisation and the composure of a professional chef. ๐

Another busy week creating some beautiful Easter-themed sweet treats with our amazing Level 2 students! ๐ฃ๐ซ
We had so much fun making these delicious cheesecake-filled Easter eggs โ they were a huge hit in the Bamboo!
Our indulgent stuffed salted caramel cookies were also a massive success and went down an absolute treat.

Today at City View, we welcomed Siran to lead the kitchen. He created a wonderful menu featuring a creamy vegetable soup, chicken skewers with slaw, and poached egg Florentine to start.
For the main course, guests were delighted with a choice of seared duck breast with stir-fried noodles, or salmon teriyaki served with steamed rice or yaki udon.
To finish, there was a tempting selection of desserts including Japanese-style custard pudding, turon with vanilla ice cream, or a refreshing fresh fruit salad.
Well done Siran. The guests loved everything.

Today at City View, we had a very special surprise!
Cat and the team from Roots4life came in to support Johnathan on the final day of his menu week โ and what a moment it was.
Johnathan has been completing his work placement with Roots for Life and has truly become part of their team.
It was fantastic to see that relationship come full circle, with them showing up to celebrate his hard work and achievements.
What a wonderful way to end his own menu week โ surrounded by the people who have supported him on his journey.
We are so proud of you, Johnathan! ๐โจ
