My absolute favourite roast chicken dish ✨

Roast chicken with soft carrots & potatoes, and a sharp, herby salsa verde on top…

save this for later, it's so good!

serves 4

ingredients

for the chicken & veg
4-8 chicken legs / thighs (skin on)
800g baby potatoes, halved
6 carrots, cut into chunks
4 banana shallots, peeled & halved
olive oil, 150ml of white wine
salt & black pepper

for the marinade
2 small tin anchovies in oil (50g for a tin)
juice of 2 lemons
1 tbsp dijon mustard
2 garlic cloves
olive oil
black pepper

for the salsa verde
1 bunch flat parsley
a small handful mint
2 tbsp capers
4 cornichons
1 shallot (finely chopped or marinated in red wine vinegar)
1 tsp dijon mustard
1 garlic clove
olive oil
salt

method
preheat oven to 200°C.

Make the marinade
blend anchovies, lemon juice, mustard, garlic, olive oil & pepper until thick and glossy

Add the marinade to the chicken

Add potatoes, carrots & shallots to a baking dish and season well with salt, pepper ,olive oil and the white wine

Place the chicken on top

Roast for 55 minutes until the chicken is golden and the vegetables are soft
(spoon the juices over halfway if you can)

Make the salsa verde
blend everything together until loose but still textured, taste and adjust it should be sharp, salty, herby

Plate the chicken with the veg and spoon over the salsa verde

Chè chuối.
A Vietnamese dessert made with bananas, coconut milk and tapioca.

Recipe (serves 4)

2 bananas
2 pandan leaves
200 ml coconut milk
50 g tapioca pearls
40g rock sugar
400 ml water

Bring the water to a boil with the rock sugar and pandan leaves.
Add the tapioca and cook until translucent.

Add the sliced bananas and coconut milk and simmer for about 5 minutes.

Remove the pandan leaves and serve warm.

Save for later if you want to try it ✨

Ricotta, lemon & almond cake 🍋
Rustic, gluten free, and dusted with sugar.

Recipe below. Save for later.

Ingredients
- 120g unsalted butter, softened
- 225g golden caster sugar (150g + 75g)
- Zest of 2 large unwaxed lemons
- 1/2 tsp vanilla
- 4 large eggs, separated
- 250g ground almonds
- 250g ricotta
- 45g flaked almonds
- Icing sugar, to finish

Method
- Preheat oven to 160°C fan.
Grease and line a 20cm round tin.
- Beat butter and 150g sugar until light and fluffy.
Add lemon zest and vanilla.
- Add egg yolks one at a time, mixing well.
Fold in ground almonds, then ricotta.
- In a separate bowl, whisk egg whites to soft peaks.
Add remaining 75g sugar and whisk to stiff peaks.
- Fold a spoonful of whites into the almond mixture to loosen.
Gently fold in the rest until smooth and airy.
- Pour into tin. Scatter flaked almonds on top.
Bake 40–50 minutes until golden.
- Cool completely, then dust generously with icing sugar.
