As we say goodbye to spring and its blossoming landscapes, June arrives, bringing with it a long-awaited burst of warmth and colour. With the impending solstice, the days grow longer as the air fills with the scents of blooming flowers and freshly cut grass, signalling that summer has truly begun.

So we get that not everyone can get along to our corner of Hammersmith and we know we can;t fit everyone in at once.... so following on from some cracking events of the last few years where we've popped up at Somerset House, Rosewood Hotel, The Hurlingham Club and Taste of London we are taking our shuckers and oysters out on the road again.

We set out from day one at Faber to source all of our products and ingredients from our British shores. We had a few exceptions where we just couldn't get the products we needed. Tea was one of those items, it scored high on our carbon impact assessment. Nothing says British more than a cuppa, but nothing travels further in our current list of ingredients.

So thanks to some help from friends at Hawkestone Brewery and Clarkson's farm we found British grown tea!!!!!

Now available at Faber in it's trusted spot next to the kettle is Tregothnan English tea!

Whisky has a vibe all its own, especially when you look at the British coastline. Distilleries by the sea in Scotland have been crafting their unique whiskies for ages, but guess what? This trend is spreading beyond Scotland!

Let’s talk about foraging along the UK coast! 🌊✨ There’s a ton of wisdom out there from folks who forage and care about our beautiful environment.

First thing's first—safety is super important! Shorelines can be a bit tricky, so make sure you're staying safe while exploring.

Wondering where to forage? The rules about land access can get a bit confusing. While some spots are off-limits, we’ve got over 7000 miles of coastline filled with hidden treasures waiting for you! Just check local websites for the scoop.

When you’re out there foraging, keep in mind: plants, fungi, fruits, and flowers are just for personal use (no selling!). But go ahead and collect seaweed! You can also fish and gather shellfish in tidal waters, but steer clear of private fisheries.

Conservation is key! Don’t pick endangered species; know what’s protected under the Wildlife and Countryside Act and avoid those special scientific sites (SSSIs).

At Faber, we’re all about seasonal eating! Following seasonal practices helps keep wildlife safe and allows food to grow back.

Laws change often, so stay in the loop! Each area has its own Sea Fisheries Committees—Google it if you’re unsure. Better safe than sorry!

It's marathon day this weekend, so anyone who's running today can have oysters on us for £1 a pop and all in the name of health and recovery! Just show us your runners medal.

There are foods that feel indulgent, and then there are foods that quietly do something more.

We wax lyrical about there sustainable creditionals, we preach how great they taste and how versatile they are. But they are also one of the most nutrient-dense foods you can eat!

Earth Day is a great time to think about how we do things, not just celebrate. At Faber, sustainability isn’t about big gestures; it’s all about the little choices we make every day.

We skip tuna and salmon because they can harm the environment and go for British options like ChalkStream trout instead. Plus, all our seafood is 100% British and comes from day boats that use lower-impact fishing methods.

In our kitchens, we’re all about 100% renewable energy and managing waste smartly through anaerobic digestion—turning waste into energy instead of dumping it in a landfill. We also love oysters since they help restore marine ecosystems!

About a third of our wine comes from the UK, cutting down on transport emissions while supporting local producers.

These choices show what responsible hospitality looks like. Earth Day is a reminder to keep evaluating our sustainability efforts—it's not just a marketing moment; it’s our everyday commitment to do better! 🌍✨

In summer, mackerel flashes silver and blue in our coastal waters, bringing joy to communities for generations. While the fish remains abundant, the Northeast Atlantic mackerel stock faces management issues among nations like the UK, Norway, and Iceland, leading to overfishing.

Waitrose has removed Northeast Atlantic mackerel from sale to raise awareness about these management concerns, urging better agreements that align catches with scientific advice. Retailers' worries focus on fishing scale and management rather than the fish's sustainability.

Large pelagic trawlers catch significant quantities of mackerel, closely tied to international quota disputes. In contrast, smaller coastal fisheries use low-impact methods like handlines, resulting in minimal bycatch and seabed impact.

At Faber, we prioritize sourcing mackerel from small day boats along the south coast, ensuring it’s fresh and sustainably caught. This fast-growing species represents local seafood that aligns with our coastal food culture.

The distinction between large-scale industrial fishing and small-scale dayboat fishing is vital. Large retailers focus on global supply chains, while restaurants can emphasize local and transparent sourcing.

Happy Easter... Here's a story about our name, John Dory and an endless supply of fish!

Faber (Zeus) being the Latin for the well-known John Dory fish has a rather distinct mark on its side. This mark is referred to in the bible, it is said to be the thumbprint of Peter the Apostle who, scriptures has it, was told by Jesus to row out into the sea of Galilee and cast his nets. After dropping a coin Peter reached in to pull a fish out that had swallowed it, to this day Peter the Apostles thumbprint remains on the John dory.

Sadly, the very name should act as a reminder to us all! The fish that is now found in abundance in UK waters was sadly over fished and stocks were obliterated in the sea of Galilee, the past may not have been aware of sustainability as we are today, but it remains a topic we should not forego lightly.

To this day Peter the apostle remains the patron saint of fisherman. An occupation to this day that carries many dangers and responsibilities.

Now there's a reason to visit!

We'd love to se you this Easter weekend at Faber, but we're guessing some of you may be off on travels, so here's a few recommendations of awesome beaches we've seen on our travels to find ingredients for our kitchen... even we needed some down time on the beach...

☀️ Whitesands, Pembrokeshire
It took our breath away the second we drive down the narrow winding lane! Big skies, rolling surf and proper Atlantic energy. It’s the kind of place where you walk for miles, then sit one the and watch the tide roll out!

☀️ Wells-next-the-Sea, Norfolk
You earn the sea here — a long stretch of sand before you reach the water. But that’s part of the charm. Huge horizons, soft light, pine trees behind you. Calm and unhurried.

☀️ Luskentyre, Isle of Harris
Almost Caribbean in colour — until the Hebridean wind reminds you where you are. Wild, beautiful and often blissfully empty. One of those beaches that stays with you.

☀️ Camusdarach, Morar
Shell-dusted sand and views across to the islands. Quiet, cinematic, and incredibly peaceful. It feels remote, even when it’s not.

☀️ Bantham, South Devon
Classic South West. Gentle surf, golden light, and long afternoons that turn into evenings without you noticing.

Day well spent. Early mornings on the pass with Ollie and the team.

Our ingredients aren't easy to come by, so when they are dropped early doors to us at Faber it's on us to make sure we do justice to what we think is some of the best ocean ingredients in the whole world. Our coastlines can be so bountiful when nurtured with good stewardship, but it's on us to bring it to the plate and do it proud.

FABER X // Friday 3rd April

Just over 20 years ago I started working with a young chef, a few years later we became business partners. We went on a long journey together before I stayed in London and Jason went to live on the coast. Jason was there as a steady, helping hand when we opened Faber. He’s been one of those friends who@always has your back!

Roll on 3 years and I’m so proud to say that has opened his own venue and I get to play a small part and call him my business partner again (although he is very much the senior partner in this project alongside , another industry legend). The Plough in Dormansland is Jason through and through, destination venue with proper English grub, but retaining what a pub should be, something at the heart of the community.

So to celebrate a long friendship rooted in hospitality and culinary delights we are taking Faber our 2 Rosette restaurant and setting up camp for one night at The Plough to serve 60 wonderful guests a five course Faber sourced menu ‘From British Shores’!
