KATOL MACH BHAJI
Known as Katia fish or Indian carp, this is a popular freshwater fish in Bangladesh. If you don’t have time or unsure about the cuts, you can have the fish prepped for you at the fishmongers. All you then need to do is rinse with a little lemon juice, drain well and follow the recipe below!
RECIPE
8 pieces fish
3 tbsp mustard oil
1 tbsp garlic & ginger puree
1 tsp salt
1 tsp turmeric
1 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp chilli powder
3-4 slit green chillies
1/4 julienned red chilli pepper (optional)
METHOD
Place the fish in a large bowl and gently mix well with all the ingredients. Leave to marinade for 15-20 mins. The air fry in batches of 3-4 pieces at 180 degrees for 12-15 mins until golden all over.

Calling it a wrap with this very last Biriyani Masterclass. After 13 years of teaching, I have decided to wind down the business and reprioritise and realign my life.
I want to thank each and every one of you who has been on this incredible journey with me. We have learnt and laughed together and created some beautiful memories that I will cherish forever, in memory of Najma, my Mum who will always live in my heart ❤️

In my favourite place with my favourite food after a very hot and sticky commute from London Bridge 🥵 But I so love these longs summer evenings where I can sit peacefully in my Moroccan inspired garden retreat, beneath the flawless blue sky and listen to the gentle sounds of nature 💚
Here’s the recipe for my Summer Garden Salad:
INGREDIENTS
100g sweetcorn
1 cucumber
2 celery sticks
1 green pepper
1 red pepper
1 apple
100 Greek feta
Handful of baby spinach leaves
Course black pepper
Chiili flakes (optional)
2 tbsp lemon juice
1 tbsp olive oil
Simply chop up the vegetables and feta however you like, except the spinach and sweetcorn. Mix all the vegetables and feta together. Add in the pepper and chilli flakes, if using. Mix the olive oil and lemon juice in a small bowl and then drizzle over and fold into the salad.
Simple and delicious. Use a ripened Alfonso Mango 🥭 instead of apple for a more exotic sweetness ❤️
Makes 4 generous servings.
