Molokhiya (ملوخية) in the Lebanese tradition is rooted in the agrarian food culture of the eastern Mediterranean, where seasonal, nourishing dishes emerged from rural households rather than formal gastronomy. Built around the molokhia plant, long valued for its resilience and nutritional richness, the dish was traditionally prepared in large quantities to sustain families, especially during colder months. In Lebanon, molokhiya developed its own distinct identity through gentle stewing with garlic and coriander and a carefully balanced presentation over rice with vermicelli, accompanied by tender poached chicken, toasted flatbread, and sharp onion vinegar. This interplay of softness, crunch, and acidity reflects a broader Lebanese culinary ethos that prioritises balance and restraint, making molokhiya not only a meal but an expression of continuity, memory, and home-based knowledge passed down through generations.

Kafta bel saniyeh (كفتة بالصينية), literally “kafta in the tray,” is a quintessential Levantine home dish whose origins lie firmly in domestic, not elite, culinary traditions, particularly in Lebanon. It emerged as a practical adaptation of kafta, seasoned minced meat traditionally shaped and grilled, reimagined for oven cooking in a single communal tray (saniyeh). The incorporation of potatoes and a light tomato sauce reflects a resource-conscious cuisine that balances protein with staple produce, stretching ingredients without compromising flavour.
Historically, kafta bel saniyeh captures a moment of transition in Levantine food culture, as rural cooking practices met urban kitchens and enclosed ovens became more common in the late nineteenth and early twentieth centuries. Tomatoes and potatoes, relatively recent additions to the regional pantry, were absorbed seamlessly into existing culinary logics of seasonality and balance. More than a recipe, the dish embodies social intimacy: it is meant to be shared, placed at the center of the table, and eaten collectively. Starting 15 January 2026, we will be serving a rotating Lebanese menu daily from 6:00 PM to 11:00 PM, except Sundays.

To get to the location on Westbury Avenue in London, you can take public transportation such as the Jubilee line on the London Underground and get off at the West Ham station. From there, walk southbound until you reach Westbury Avenue.
If you are driving, take the A12 and turn onto Romford Road. Follow it until you reach Westbury Avenue. There is limited street parking available in the area, but there are also paid parking lots nearby.
