Tiramisu gets all the glory, but in Italy, chocolate mousse runs a close second. Both demand respect, both require patience, both are absolutely worth it.
Ours starts with a rich egg custard base, folded with 70% dark chocolate and semi-whipped cream. Served with our homemade roasted cocoa nibs and sugar brittle, and finished with salted butter caramel.
Made fresh at Lina Cucina every day. Just as it should be.

Tiger prawns marinated in garlic and chilli, grilled over high heat until lightly charred, then served with Datterini tomatoes for sweetness and acidity.

“It’s really not easy to describe my role as a Head Chef but I’d say it’s challenging and amazing. You have to be a good listener, not only a good chef. You’d be surprised to see how it is more difficult to make people in your team happy than preparing and plating a nice dish.
Working with people and making customers happy is what I love most on a day-to-day basis. A great day in the kitchen to me is when you have worked as a real team, seeing everyone giving 100% of what they have.
Since I was a kid, I really wanted to become a professional chef, but sometimes life takes you in other directions. I worked for many years in offices as I have a degree and a master’s in economy, but I was never happy with what I was doing. The passion and love for cooking have always been within myself, so I wanted to turn my passion into a real profession. For this reason, about twenty years ago I gave up my old job and started to work in the hospitality business. I will be 49 in June and the advice I’d give to young chefs is to follow your dreams and your passion and always believe in yourself. “

Caseificio Tosi is a family-run Gorgonzola producer near Lake Maggiore in northern Italy. For over three generations, the Tosi family has crafted artisanal cheese using time-honoured methods that continue today. Available in our delicatessens and featured seasonally in our restaurants.
