Radish carpaccio.

This dish highlights the farmers we use, and pays homage to Alain Passard, a visionary when it comes to seasonal produce. The radishes and pears are from in Cambridge and the sea herbs are from are up in Scotland. The dressing is made with pear, ginger and a kumbo oil, finished with mustard seeds and black mustard leaf.
