Episode 3: The Toddy Shop
If you want to understand a place, start where the locals gather.
For us, that meant spending the day at our favourite Toddy Shop in Kochi. We cooked alongside the women who run it, shared stories over lunch, learnt why the first pour is always offered to the gods, and saw how food carries generations of tradition with it.
We came back with a few recipes, a lot of stories, and an even bigger appetite to share Kerala with London. ❤️

KOCHI
Someone sent us to the fish docks before sunrise. Someone else insisted we couldn’t leave without visiting their favourite toddy shop. Before we knew it, we were in kitchens, cooking alongside local cooks, tasting dishes we’d never have found on our own.
Safe to say, some of this is making its way to Bulbul, London.

Episode 2: Mahua
There was no plan that morning to watch Mahua (an Indian spirit) being made.
On our stroll through Mardari village, one conversation led to another. Someone said, “Come with us,” and before we knew it, we were in a family home, learning about Mahua from the people who grew up making it.

EPISODE 1:
“Andaaze se” (By instinct)
Two words we heard countless times while travelling across India.
This chutney in Bandhavgarh was no different. There were no measurements, just years of practice, a few “taste karo” (give it a taste) moments, and one simple lesson: in winter, add a little more chilli; in summer, a little less.
It wasn’t just about following a recipe. It was about cooking the way they always had, making small adjustments without ever really thinking about them.
Safe to say, this one wasn’t staying behind in Bandhavgarh. It’s coming to London. ❤️

*Introducing, The Bulbul Food Story*
Before there was a restaurant, there was a journey.
Over the last two years, we’ve travelled across India, meeting people, listening to stories and learning along the way. From homes and markets to toddy shops and local eateries, more often than not, nobody could tell us the exact recipe or measurements of the ingredients. They just knew. It came from instinct and years of practice.
This first film was shot in Bandhavgarh, Madhya Pradesh in February 2025. At the time, Bulbul existed only as a dream, a set of drawings, and countless conversations about what we wanted to build.
A lot has happened since then.
There have been flights, delays, construction sites, challenges we never anticipated, and moments where the finish line felt very far away. But through it all, these experiences remained at the heart of what Bulbul would become.
Over the coming weeks, we’ll be sharing stories from our travels across India that have inspired the food, the drinks and the spirit of Bulbul.
We hope you enjoy watching them as much as we enjoyed living them.
