In Sri Lankan cooking, spices are never just ingredients, they’re memory, geography, and tradition ground into every meal. A curry doesn’t begin in a pan; it begins in the soil, in the misty hills where pepper vines climb and in the cinnamon groves that have shaped the island’s identity for centuries.

Take cinnamon, for example. In Sri Lanka, it isn’t the harsh, one-note spice often found elsewhere. True Sri Lankan cinnamon often called “Ceylon cinnamon” is delicate, almost floral, and quietly sweet.

Then there’s the curry leaf. It might seem simple, but in Sri Lankan kitchens it’s foundational. The leaves are often plucked fresh from backyard trees just moments before they hit hot oil, releasing a sharp, nutty fragrance that signals the start of something comforting. It’s one of those ingredients that ties everyday cooking to home, no matter where you are.

Spices like cardamom, cloves, and pandan whisper through rice and curries, while roasted coriander, cumin, and fennel form the backbone of many spice blends. Each household often has its own “secret” mix of roasted spices.

What makes Sri Lankan spice culture so special is that it isn’t static. It travels through generations in memory rather than recipe books.

The Sounds of Home

The making of pol sambol from our mothers’ hands. The sharp crack of a fresh coconut split open, the husk peeled away, sweet coconut water drunk straight from the shell. The steady rhythm of coconut being grated and ground together with dried chillies, chilli flakes, bright green limes, garlic, and shallots. Measurements never written down, only remembered through years of practice and instinct, all worked together into our pol sambol.

These are the memories and sounds of home.

Colours of Sri Lanka 💚

Step into a market and it hits you all at once, the greens aren’t just green. They’re ripe mangoes, zesty limes, handfuls of chillies, all piled high and tumbling into each other.

There’s chatter, movement, a bit of beautiful chaos… and somehow, it all makes sense. These are the flavours that build our curries, layered, vibrant, and full of life.

Our Chocolate Biscuit Pudding

A beloved Sri Lankan classic, Chocolate Biscuit Pudding is a no-bake, layered refrigerator cake made by alternating milk-soaked Marie biscuits with a rich, creamy chocolate mousse.

At Kolamba East, we’ve added our own twist, topped with crumbled Biscoff and a jammy conserve that brings a subtle tartness to balance the indulgent chocolate.

It’s moreish, creamy, and utterly irresistible. One bite, and you’ll understand why it’s a staple in our homes.

Aunty Mo’s ‘Chatti’ Roast, a dish born from an unexpectedly delicious mistake.

Aunty Mo grew up learning to cook on her family farm deep in the jungles of Vavuniya, Sri Lanka. Under her mother’s guidance, she discovered how simple, nourishing ingredients could be transformed into rich meals. Drawing from her Malay heritage, her kitchen became a place of colour and abundance, curries, sambols, rices, and salads lovingly prepared for family and friends.

Her Chatti Roast, however, was never part of a plan. One day, watching her mother cook in a hurry, something was forgotten: no water, no coconut milk, just beef left to cook in its own juices. What emerged was unexpected a dry, deeply aromatic curry where every spice clung to the meat in perfect harmony, and in that moment, a new family favourite was born.

Now we invite you to follow that same serendipitous path at Kolamba Soho.

Experience Chatti Roast: a bold, slow-cooked celebration of spice, heritage, and the beauty of happy accidents that become tradition.

Sri Lanka’s cuisine has largely been shaped by its geographic position in the Indian Ocean. Surrounded by an 830-mile-long coastline, seafood is an integral part of the island’s diet. Then come the lagoons, rivers, and small streams that wrap around marshes, paddies and forested interiors, bringing freshwater fish in abundance.

Before the sun rises over the coasts of Sri Lanka, the boats return loaded with fish. Freshly caught fish that will be sold at Lellama, one of the most famous fish markets in Sri Lanka.

People visit from all over the world, finding inspiration for their dishes, just like us. We’re inspired by the same commitment to freshness and quality, so we can bring you the finest, freshest ingredients.
