Another extremely satisfied client. I was able to make there Thursdays evening exceptional by offering them a small canapé’s tasting session.

They were blown away by the level of service and knowledge that I gave and provided.

Made a very special day even better for a couple celebrating there anniversary.

I will attach the message below.

I catered and provided a bbq for 30 close friends and family took the stress out of there special day.

I have attached pictures below of the bbq food.
The menu they picked was the following:
- 6 oz rump steaks finished in a generous amount of parsley garlic butter
- Orange, Soy chicken skewers
- 8 oz steak burgers with homemade burger sauce, watercress and smoked applewood cheddar in a brioche roll.
- salmon parcels filled with Prosecco, bayleaves, peppercorn, butter, shallots.
-Cumberland sausages with onion jam.
- Charred sweet potato salad with feta and red onions.
-Lebanese slaw
-Tomato and mozzarella salad with fresh basil pesto
-Grilled Mediterranean vegetables marinated with garlic and rosemary.
- homemade triple chocolate fudge brownie.
- Lemon posset shots with fresh raspberries

Morning. Thank you so much for the wonderful food. All our guests thoroughly enjoyed the delicious and very well presented dishes. We got many compliments about your food and would happily recommend you to anyone. We are aware that much preparation goes into the food even before the actual cooking.

Catered for one of my best clients yesterday for his birthday.

They picked a very summery menu.

On the Grill.

Seseame crusted tuna steaks.
Whole ribeye on the bbq served in a tomato ciabatta with chimmi churri sauce.
Cajun chicken skewers finished with a mango buffalo sauce.
One of my personal favourites kielbasa in a brioche sub roll with baby rays bbq sauce finished with crispy onions

For the salads.

Niçoise salad
Rocket, watercress avocado and croutons salad finished with my homemade vinaigrette dressing.
Greek feta salad

For the vegetarians and vegans.

Parmesan cheese corn on the cobs
Courgette spiced fritters with tzatziki
Mushroom and halloumi burger with Harrisa mayo served in a brioche bun.

For a sweet treat.

My signature white chocolate and raspberry blondies.

Candy pickled beetroots with a goats cheese truffle mousse a walnut and sage pesto finished with micro red vein sorrel.

Smoked haddock and sweetcorn chowder finished with a vibrant green dill oil.

Main
Dry aged roast Beef with garlic and rosemary roasted potatoes homemade Yorkshire puddings

Pavlova with Caramelised rum cooked plums and vanilla chantilly cream.

Had a private function for my best client.

He requested the following
Crispy duck starter
Roast rib of beef
Apple crumble

I did what he asked but with my twist on it so he would have an awesome Sunday roast.

I made for starter a crispy duck starter with a tamarind glaze finished with my homemade pickles and kimchi cucumber 🥒.

For main a 4 bone in rib of beef with all the accompanying necessities for a family Sunday roast. Compromising of cauliflower cheese, homemade Yorkshire puddings, rich red wine Jus, garlic and rosemary roasted potatoes 🥔, sweetheart cabbage and confit shallots, braised red cabbage.

Last but not least a deconstructed apple crumble with a ginger shortbread biscuit, fresh vanilla custard, finished with a spiced rum semi gel.

My clients feedback was the following:

We had a Remembrance Day for one of the members at Lamberhurst Golf Club ⛳️.

The little pot is an amuse bouche of mushroom and truffle veloute.

Mains is Guinea Fowl 2 ways.

Pan seared Guinea Fowl breast.
Confit fa**ot of the leg.
Served with a sage and chestnut 🌰 purée
With creamy dauphinois potatoes and lemon roasted roots finished with a guinea fowl jus.
