A sauce in its purest form!
Just tomatoes, sale di Trapani, wild origano from Etna, and Sicilian olive oil.
Then time, and patience.
Left in the oven at 150c for 40 minutes, the tomatoes slowly release their essence, fresh, bright, and incredibly pure.
As the days grow longer and the sun stays with us a little more, the tomatoes begin to change. Sweeter, softer, full of water and light. This is when simplicity works best.
No cooking, no interference, just letting the ingredients speak.
This is how I like to taste the beginning of summer.
