We’re launching Earth to Plate: a new bi-weekly supper club residency at Wild IS Earth, kicking off on Wednesday, 23rd September.

Every other Wednesday evening, we invite guest chefs and culinary creatives into our kitchen to explore a single, grounding question: How can we nourish our relationship to the land through living food?

We bring this wisdom directly to the table through living food experiences. Across each residency, our guest chefs are given complete creative freedom to share their passion—exploring soil health, biodiversity, zero-waste craft, and live-cultured dishes.

Wild IS Earth x Road to Terra Madre 2026

Very excited to finally share this one and be part of the slow food movement…

On Thursday 17 September, Wild IS Earth becomes part of the official Road to Terra Madre 2026 programme, with an intimate evening dedicated to what sits right at the heart of what we do: living fermentation, plants, biodiversity and kombucha.

I’ll be opening up the microbrewery and taking just 24 people a little deeper into our world.

We’ll explore how tea, wild plants, yeasts + bacteria come together to create a living drink, before tasting our way through a selection of Wild IS Earth kombuchas made with whole-leaf teas, nettles, flowers, roots, fruits and seasonal botanicals.

And because nothing in a living system really ends as “waste”, there’ll be a selection of plant-based wild bites, including our SCOBY calamari, turning the cellulose culture created by kombucha into something entirely new.

This is more than a kombucha tasting.

It’s about microbial biodiversity + botanical biodiversity.
Preservation. Transformation. Flavour.
And our ancient relationship with microorganisms, plants and the Earth.

Very excited to finally share this one.

On Friday 18 September, Wild IS Earth becomes part of the official Road to Terra Madre 2026 programme, with an intimate evening dedicated to what sits right at the heart of what we do: living fermentation, plants, biodiversity and kombucha.

I’ll be opening up the microbrewery and taking just 24 people a little deeper into our world.

A new rotating chefs’ residency at Wild IS Earth, exploring the journey from:

Earth → ingredient → plate → human → Earth

Every other Wednesday, a different chef will bring their own expression to the table—moving through food, fermentation, seasonality, creativity, connection and our relationship with the Earth.

We’re looking for chefs who want to create memorable dining experiences rooted in:

♻️ Low-waste, sustainable cooking
🌍 Locally sourced ingredients
🔥 Food with soul, identity and a story

Fermentation sits at the heart of Wild IS Earth. You’ll be invited to collaborate with our living kombucha and botanical bar, developing creative drink pairings that become part of the experience.

You’ll also have access to:

• Our intimate dining space
• A licensed botanical fermentation bar
• A HACCP-compliant kitchen
• An established audience and community
• Passing trade in the heart of Kentish Town
• Email, venue and social media promotion
• Opportunities for longer-term collaborations

Digging through some old files today and found the original mood boards I created when I was first dreaming up Wild IS Earth. 🌀🧠🌱

​Before the taps were flowing or the bottles were filled, these were the exact visuals floating around my head. I was completely drawn to surreal anatomy, retro geometry, underground networks, and the raw, beautiful complexity of living systems.

​I knew from day one that I didn't want to build a sterile, polished brand. I wanted to create an ecosystem where science, art, and wild fermentation collide. Looking back at this board now, it makes total sense why we ended up exactly where we are—brewing alive, experimenting with living materials, and leaning into the beautiful unpredictability of nature.
