English translation of our talk at Sherbeth 2025👇
“Hello everyone! We are Biagio and Cristian from Wave Gelato (I’ll go fast because we have quite a few things to say).
We are a traveling gelato shop in London with our bikes and our Ape car. Last year we talked about ourselves here at Sherbet, this year we want to talk about the amazing people who work with us.
That’s why we brought Dulce de Leche for the public, which tells the story of our first coworker Ruthi ( ) , from Argentina. While for the jury we brought ‘Breakfast in Lebanon’ to talk about our collaborator Adam ( ), right here next to me.
The carob that characterizes this flavour comes from Adam’s grandfather’s field, in southern Lebanon, a small Mediterranean village called Zrariyeh (I hope I pronounced it correctly).
Adam’s grandfather planted the carob trees about 15 years ago, next to olive, fig and orange trees.
Every July the pods are harvested and left to dry in the sun, during which they develop an intense, sweet and warm flavour with notes reminiscent of cocoa and dates.
After drying, the pods are turned into molasses, a thick, dark liquid, which in the village is mixed with tahini (just like in our gelato) and eaten with bread for breakfast during winter months.
Last year, however, the harvest was very difficult. In September 2024, when the pods were ready to be picked, the bombing in southern Lebanon began, forcing many families to abandon their fields and homes.
That’s why this molasses is so special.
Presence, strength, resilience, the connection to the land and the territory. The strength to keep going despite all difficulties.
This flavour comes from Adam’s story and his family’s story, and it is our way of celebrating the people who work with us, who bring with them their roots, their own experience.
And as the t-shirt designed by a colleague here today says: ‘the only things we want are gelato and a free Palestine’.
