Verdor Cocuy
A traditional Venezuelan agave spirit, made from 100% Agave Cocui in the arid landscapes of Lara
Produced using methods that date back generations, with agave that takes up to 8 years to mature before being harvested and distilled by hand
It shares a lineage with tequila and mezcal, but offers a more delicate expression. Clean, lightly smoky, with a soft, earthy finish
Weâll be featuring Verdor across a short run of cocktails this weekend

Cascina Iuli at Carmel
Next week weâre pouring wines from the hills of Monferrato in Piedmont, made by winemaker Fabrizio Iuli.
Working with Barbera, Nebbiolo and Pinot Nero, the wines are fermented with ambient yeasts and handled gently in the cellar, resulting in bottles that are vibrant, expressive and firmly rooted in their place.
Throughout the week weâll be pouring a selection by the glass, carafe and bottle, alongside a three-wine flight.
Fabrizio will be joining us in the restaurant on Wednesday evening, and will be around for anyone curious to learn more about the wines.
If youâd like to join us that night, we recommend booking a table.
All wines will also be available to take home.

A small but very important upgrade at Carmel.
Our long banquet tables used to have bench seating. They looked great, but many of you told us the same thing⊠benches and dinner donât always mix.
So we listened.
The benches are gone and weâve added proper individual chairs all the way down the table. Proper back support, more comfort, and a much nicer way to dine.
No more awkward shuffling. No more numb backs. And yes, you can now comfortably bring your pregnant pal.
These tables are perfect for bigger gatherings and celebrations right in the heart of the restaurant.

This Friday weâre hosting a wine showcase at Carmel, featuring bottles from Matthieu Cosse of Domaine Cosse Maisonneuve.
A selection of his wines will take over our list for the evening, poured at special prices and designed to sit comfortably alongside the menu. Matthieu will be joining us on the night should anyone want to chat, but the focus remains on good food, good wine, and a laid-back Friday at Carmel.
