We’ve been featured among the best lunch restaurants in London.

When we opened Baccalà in December 2019, we never imagined our little seafood and wine restaurant on Bermondsey Street would be recognised alongside some of London’s best places for lunch.

Lunch for us has always been important — a slower pace, seafood to share, a glass of wine, stories from our producers, and the feeling of sitting around a table with friends and family.

Thank you to everyone who has joined us over the years.

If you haven’t visited for lunch yet, perhaps this is your sign.

A concept matters.
But the best restaurants go beyond it.

They’re built around people — a chef with a point of view, a sommelier with a passion for what they pour, and a team that cares about every table.

Baccalà was created by Fabio, Moreno, Elif and Ilanit — together with a team that brings it to life every day — with a shared belief in honest cooking, real wine and generous hospitality.

That’s Baccalà.

A menu that never changes is a menu that stopped paying attention.

Italian cooking has always followed the seasons — not as a trend, but because that’s how it has always been done. What’s fresh is what gets cooked.

At , Chef changes the menu around what’s best from the market and the sea. Some things stay. Most things evolve.

Wishing everyone running the London Marathon tomorrow the very best!
Chef Moreno, sommelier Fabio and the Baccalà team are proud to support Alfred Salter Primary School — donating burgers for their marathon fundraiser tomorrow, with Moreno there to grill them himself.
Every burger helps raise money for the school. A small thing that means a lot to our neighbourhood.
Good luck to all the runners.

The best italian dishes aren’t complicated.
They’re built on restraint; the right ingredients, treated with care, with nothing added that doesn’t need to be there.
This is something we think about with every dish at baccalà. Fresh seafood, handmade pasta, seasonal vegetables. Simple, intentional cooking.

A wine list tells you a lot about a restaurant.
If it only offers the varieties everyone already knows, that’s a missed opportunity. Authentic Italian restaurants explore the full depth of Italian winemaking — native grapes, regional producers, wines with real character.
Fabio and Moreno have built a list that covers all twenty italian regions, focused entirely on small, independent, low-intervention producers.

Italy isn’t a single cuisine — it’s a collection of regional traditions shaped by geography, climate and history.

A dish from Sicily looks nothing like a dish from the Veneto. A wine from Piedmont tells a completely different story to one from Calabria.

At Baccalà, we cook with this in mind. Seasonal ingredients, regional inspiration, honest technique.

How can you tell if an Italian restaurant is truly authentic?

It’s not about decor or how many pasta dishes are on the menu. Authentic Italian cooking is built on a few simple principles: regional traditions, seasonality, great ingredients and a wine culture that reflects the diversity of Italy.

Over the coming weeks we’ll explore these ideas in more detail and share what makes Italian food culture so unique.
We also wrote a short guide about it in our journal.

World Vermouth Day.

We’ve been quietly working on this for a while —
between updating the website, hosting our first EVOO dinner with Giulia Crouch, and welcoming guests… we didn’t even manage a proper sneak peek.

So here we go.

A small vermouth selection at Baccalà, curated by Fabio.
Served on the rocks, as flights, or as part of a Negroni.

The Italian aperitivo, the way it’s meant to be —

We host two kinds of EVOO experiences at Baccalà.

Our tastings are about learning — how to smell, sip and recognise flavour.

Our pairing dinners are about cooking — where each dish is built around the character of an oil.

Food writer Giulia Crouch first suggested turning this idea into a menu.
Since then it has become one of our most distinctive dinners.

On 18 March we host it together for one evening.

A four-course collaboration.

Even when London feels grey, spring finds its way into the kitchen.

Bruscandoli — the tender shoots of wild hops — appear for only a short moment each year.

You’ll find them in our risotto al salto - asparagus risotto and black stewed squid.

Alongside, the first spring peas of the season with
gnocchetti ai funghi e piselli — potato and rocket gnocchi with wild mushrooms.

Sweet, bright, and unmistakably spring.

Saturdays at Baccalà are becoming something of a ritual.

A whole fish, chosen in advance, cooked slowly and served at the centre of the table with seasonal vegetables and sauces, a long lunch designed for sharing.

Not a set menu, not a special occasion.
Just how we like to eat on a Saturday.

Extra virgin olive oil is not just olive oil.

Like wine, it comes from a place, a harvest, a variety, and a producer.

It can be green and bright, bitter and peppery, soft and round, and it changes the way food tastes.

At Baccalà we don’t treat EVOO as a finishing touch.
We taste it, select it, and serve it with intention.

During our tastings we smell, sip and talk about each bottle, where it comes from and why it matters.

On 18 March we’ll dedicate one evening to it, with food writer and olive oil expert joining us in the dining room.

More soon.
