Our Pork Belly AL PASTOR is flying.
Making any dish with Pastor Adobo is a tight skill.
You want to get that charred finish. The right consistency and coating of the adobo on the meat.
You need to understand solubility, viscosity, aromatic impact compounds, maillard browning and functional seasoning. The first recipe I developed when I started cooking at 15 years old.... that was about 5 years ago ๐ณ
I know.

We got Tostadas. And we're not afraid to use them.
Hake, Kiwi, Lime, Jalapeรฑo, Avocado, Cantaloupe. Prickly pear, Micro Herbs.
We've told these are mean tostadas, these slap and slap hard.
