I am truly humbled and honoured to share that I have been recognised on the British Asian Power 100 list — I believe I may be the first Sri Lankan to receive this recognition. 🇱🇰✨

To stand alongside previous honourees including former Prime Minister Rishi Sunak is something I could never have imagined when I first arrived in this country with nothing but a passion for food. This is not just a personal milestone — it feels like a moment for the entire Sri Lankan community here in Britain.

What made the evening even more special was getting to meet the wonderful people including — the brilliant Karishma Apprentice 2026 winner and founder of Kishkin.

This recognition belongs to every single person who has walked through the doors of Colombo Kitchen — my incredible team, my loyal guests, my husband, and everyone who believed in the quiet power of authentic Sri Lankan food.

We started with a small restaurant in Worcester Park just before a pandemic. We cooked through it, grew through it, and never once compromised on the flavours and values we brought from home. These awards — the National Chef of the Year, Sri Lankan Restaurant of the Year, the Great Taste Awards — they are beautiful. But being seen as someone who has made a difference to British Asian life? That is something else entirely.

To every young Sri Lankan, every South Asian woman who has ever been told the industry is too difficult, too male, too much — I hope this shows that your story belongs here too.

Thank you from the bottom of my heart. 🙏

Don’t ever brag to a Sri Lankan that you can handle spice, cause my body left the soul for a second.

Sylvia Perera grew up in Kurana, Negombo on Sri Lanka’s west coast, and learned to cook by sitting and watching her grandma before she was even school age. That’s where the whole philosophy comes from. She says she’s trying to cook the way her grandparents did, makes her own curry powder, brings ingredients in from Sri Lanka, everything fresh daily.

Carefully balanced and patiently fermented - artisanal hoppers

At Colombo Kitchen, Chef Sylvia keeps a beautiful tradition alive — learning the craft of hopper-making from her aunty and perfecting a skill that’s becoming increasingly rare.

The hopper batter recipe is the heart of it all. Get that wrong, and nothing else matters. It’s the most important part. It's easy to get wrong — not crispy enough or overly fermented. But here, each one is just right: delicate, crisp-edged, soft in the centre, and the perfect companion to rich chicken or pork curries.

Her hopper chefs train for months before they start service. Chef Sylvia does not send out hoppers that are not perfect.

A taste of heritage, tradition, and true craftsmanship in every bite.

Pancake Day, Sri Lankan style with Chef Sylvia’s famous hoppers 🇱🇰

A proper Sri Lankan hopper should have beautifully light brown edges with a soft, delicate centre. The perfect balance of texture and flavour.

✨️What to look for:
✔️Slightly brown crisp edges
✔️Soft, fluffy middle
✔️Light, airy texture

⚠️ Hopper tips from Chef Sylvia:
❌️ White light edges - the pan is the wrong temperature
❌️ Too many bubbles - the batter is over fermented or issues with ingredient proportions

Celebrate Pancake Day with something a little different. Light, fragrant, and utterly delicious.
