Terms & Conditions:
Must be UK based and 18+ to enter. The competition closes at midnight on Friday 25th March. The winner will be selected at random and announced on Sunday 27th March. Hotel Bookings can be made up to one year from date of issue and will be subject to availability. Breakfast, lunch and dinner bookings are essential.

This will be going out on everyone's main feed, along with the images from the previous email this Monday at 8am. The competition will run until the end of day Friday 25th - we'll be posting reminders on our stories throughout the week.

I will pick a winner on Saturday and send it over, that way we can all announce via Instagram on Sunday 27th March - Mother's Day. Usually, we'll announce the winner by tagging them on our stories and then editing the original post stating that the competition is now closed, and congratulations the winner @ etc.

Introducing , former sous chef of Rochelle Canteen. Lulu left restaurant kitchens behind to work more closely with the farming industry, in doing so she co-founded .collective because of a growing understanding that by closing the gap between the food, floral and farming industries there was great potential to make positive climatic change.

Braised Rabbit, Potato, Anchovy & Black Pepper Serves 4
1 wild rabbit, jointed, or 4 rabbit legs (or a jointed chicken/4 chicken thighs) 80g salted anchovies
3 large garlic cloves, finely sliced into slithers
3 hearty sprigs rosemary, leaves removed from the stalk, finely chopped
2 bay leaves
100ml dry white wine

650g waxy potatoes, such as Nicola or pink fir apple, peeled and cut into 2-inch large chunks 500ml chicken stock
black pepper
a large casserole dish

Preheat oven to 150°C.
Heat a heavy-based casserole dish, for which you have a lid. Add a generous splash of olive oil. Lightly season the rabbit joints, then add to the pan and cook over a medium heat until they are evenly, golden brown. While browning, the joints must have space. If your pan isn’t large enough, do them in batches. When browning the meat, it’s worth being patient and really allowing the joints to reach a deep, golden colour. This can take up to 10 minutes.

Persian Noodle Soup by Anna Jones

This is my take on Persian noodle soup, expertly guided by my dear friend, Mersedeh. Mersedeh is an incredible cook and hands down the most generous woman I know. Mer and I have been by each other's side through the ups and downs of the last 20 years - but up or down, our friendship has always centred around what's for dinner. She has a brilliant instagram feed, is where the food from her Persian heritage meets her brilliant cooking brain. It’s a deeply savoury soup with spice, chickpeas, lentils and some pasta thrown in for good measure. This is a great way to use up the ends of bags of pasta you have hanging around. I have suggested a noodle pasta but really any pasta bashed up a bit will do.

SERVES 4

3 tablespoons olive oil, plus extra for drizzling
2 onions, thinly sliced
1 teaspoon ground turmeric
1 teaspoon ground cumin
3 cloves of garlic, peeled and thinly sliced
1 green chilli, finely chopped (de-seeded if you like)
1 x 400g tin cannellini beans, drained and rinsed
1 x 400g tin green or Puy lentils, drained and rinsed
1.25 litres vegetable stock
200g spinach, washed, chopped
80g linguine/spaghetti, broken into 3cm sticks
a small bunch of parsley, chopped
a small bunch of coriander, chopped
a small bunch of dill, chopped
the juice of 1 unwaxed lemon (use the zest below)

FOR THE TOPPING

50g toasted pine nuts
1 green chilli, finely chopped (de-seeded if you like)
the zest of 1 unwaxed lemon
3 tablespoons extra virgin
olive oil
a handful of herbs
