Happy Sunday 🌞
The counter is fully stocked but we are only keeping 1 slice of each brownie/blondie out due to the intense heat. This will be the case over the next few days as well through the heatwave.
We believe the brownies and blondies are best eaten cold anyway. Some people prefer them at room temperature but after years of making and tasting them, I'm convinced that cold slices elevate the experience.

We've been saving up for this beast for well over a year. This will allow us to expand The Bakineer's range and introduce new bakery products over the coming months.

We are not a cinnamon roll brand but these are our empty cinnamon roll trays from today. The brand actually started with just brownies and blondies. We've been quietly making cinnamon rolls and improving our recipe since 2019, we just never had a proper platform to sell them through as they're awkward to deliver while maintaining freshness (we relied solely on deliveries for the first few years). So cinnamon rolls always took the backseat, that is until we moved into this shop.
At least half of these were rolls were bought by our return customers which is really important to us because we want to know that our food is genuinely good, not just our marketing. My brother and I are often here from early morning until midnight until our backs and feet are aching from the rolling but it's a labour of love ❤️
We're going to rest up now. See you on Wednesday 👋

Happy Birthday to my brother, Hasib 🥳
He's a pillar in the brand and The Bakineer wouldn't be what it is without him. He introduced cinnamon buns, cookies, focaccia and more to the business. You will often see him working away through the shutters as late as 1am or 2am to ensure you're well looked after the next day. Give it up for this legend👏🏽

Last week in pictures. We're always surprised at how fast time flows outside the bakery. It's hard work here but we have a lot of fun doing what we love for a living. There are always new developments and I feel like a weekly or bi-weekly post might be a good idea to keep you all updated.
1) We received a last minute order for a Pokémon cake. We don't work with fondant but a family was let down by another bakery on the day of their son's birthday. So cue me racing around the bakery looking for different sized circles 😄
2) Crunch Cake is here to stay. The new and improved version has received such great feedback that it will be on the menu regularly until people get bored.
3) Cinnamon Bun packaging. We normally serve our buns in the big white compostable burger boxes but our supplier ran out of stock for the last 2 weeks. So we temporarily had to pack them in the school cake boxes. The good news is that we just had a few thousand burger boxes delivered this morning so will revert back to these from Wednesday. Thanks for bearing with us!
4) Focaccia. This delicious olive oil infused bread is made from cinnamon bun off-cuts. We typically have it on the weekend and vary it up each week with different herbs and spices. Last week was rosemary and sea salt.
5) Salted Caramel & Raspberry Crunch Cake. We did a small batch of these on Sunday as a trial. It's inspired by the school dinner Cornflakes Tart but with a modern twist: vanilla sponge, seedless raspberry jam and salted caramel coated cornflakes (the same mixture that's on top of the brownie). Shall we do it again?

Full sellout - thank you ❤️ but I have something important to say.
The vast majority of you are genuinely happy for us when your favourite item is sold out and sometimes you try something new, which we really appreciate.
However, we are getting an increasing number of people throwing tantrums in the shop and even swearing or taking it out on us when their favourite bake is out of stock. This seems to be on the rise as the weather's getting warmer. I will not tolerate this and I will tell you off in the shop even if there are other customers.
I've not felt the need to post these negative interactions online because I know you can do better. We do not deserve this especially as we are up from early morning and the same people stay until the evening to serve you. Please contain yourself and thank you again to the 95% of you who brighten our day 🙏

Easter may be gone but our Crunch Cake is here to stay. We genuinely believe we may have one of the best Crunch Cakes in London and here's why.
We did it once and although feedback was good, it wasn't great. So we went back to the drawing board and made a bunch of changes. We then asked customers for their feedback last week and here are their comments (swipe right).
A rich chocolate sponge drowned in salted dark chocolate and treacle ganache. Topped with Belgian milk chocolate coated cornflakes and crushed mini eggs.

This beautiful family drove 4 hours from Ipswich and back to try our cinnamon buns. And then he had the audacity to come back and complain...about how good they were!
They were also looking for nearby restaurants to eat at so I recommended Wilson's Fish & Chips on Station Road and Lydia in Chingford Mount.
