Decided to make a traditional pie, mash and liquor with a chilli vinegar 🥧🥔☘️🌶️
Delicious!
First I cooked some onion down with a plant based mince and salt and pepper, added vegan beef stock and browning liquid, plus a bay leaf, Worcester sauce and liquid maggi seasoning. Once cooked and reduced, leave to cool down.
Then I prepared a suet pastry for the pie base with plain flour, vegetable suet, baking powder, pinch of salt and cold water and then used a shortcrust pastry for the pie lid.
Filling is added to the pastry, lid on and then baked for 30 minutes in individual enamel pie dishes.
I soaked nori sheets in vegetable stock with some vegan fish sauce to create a fish stock which a cold water and flour mix is added to to thicken along with a big pile of fresh parsley. Sieve out the nori sheets before making the sauce.
I made the chilli vinegar a week ago by soaking a lot of fresh chillis in vinegar and salt (which were then preserved in oil after removing from the brine) and then I kept the vinegar which I added more fresh chillis too.

Incredible weekend of vegan food in Berlin, celebrating birthday. We started the weekend with really tasty Vietnamese food which we found by accident, and enjoyed some tasty late night vegan currywurst before a fun night out at
On day 2 we had the most insanely good brunch with top notch scrambled tofu and a cinnamon roll I'd die for followed by a veggie soup and hot mulled elderflower juice at Teufelsee lake. That night we went to ,a zero waste plant based restaurant and had a wonderful time and literally ate everything on the menu.
On day 3 we rounded off the trip with delicious noodles and dumplings before our flight home.
Love Berlin!

Had a fun day helping out at the launch event today. I made some funghi pizzas and now I want a pizza oven soooo much! I even got to wear a blue Oyster substrate hat and took home a pink oyster growing kit! 🍕🍄

I made some with Sashimi No Tuna and Sashimi Zalmon with avocado, spring onion, cucumber and carrot. I also made some crispy tofu and chickn teriyaki. Lots of pickled ginger and wasabi too!

This I am doing 'one shop Jan', which means I did just one small food shop for essentials under £25 at the start of the month and am doing no further food shopping until February. Using up the food already in my freezer and cupboards has been lots of fun and I'm already thinking differently about my approach to food shopping! Here is a selection of some mid week meals I made from leftovers and items shoved at the back of my freezer!
Kimchi fried rice, zalmon and smacked cucumber + chilli garlic noodles with dumplings + vegan carbonara with zesty parsley breadcrumbs + homemade no fish fingers with cubed potatoes, homemade tartare and veg + chickpea curry with brown rice, tamarind sauce and mint sauce + falafel bowl with homemade humms

Malaysian vegetable curry based on recipe by .heng (who's food I am obsessed with). Tofu puffs, okra and aubergine all made in my new air fryer which is my favourite kitchen toy ever. Curry also has green beans, tomatoes and cabbage and is made with a delish curry paste and coconut milk. Lovely Friday night dinner!
