Set within our converted mews house in Belgravia, with Tom and his team of chefs cooking just in front of you, every detail is curated around you and your guests.

The Love Affair Continues. Turbot, Duck Confit, Pomme purée. France has always been very close to my heart. I have spent a lot of time travelling and working in France, as well as travelling through the w**e regions of the south, slowly but surely developing my love affair with food. This continued working alongside a few great French chefs, Pierre Koffmann & Joël Robuchon. This is a dish that comes from my love for French gastronomy and its produce.

Just Down the Road. The reason for this lovely little ode to one of our suppliers, is that Old hall Farm was just down the road from where I used to live in Norfolk. As the ricotta is a signature dish we change it seasonally. This is with fig, broad bean, artichoke. Many miles have been travelled, and countless hours spent, in an ongoing quest to find the very best of British producers to supply Muse with ingredients. We celebrate Old Hall Farm as one of them!

The very first time I ate this dish was at my mother in law’s home in the sunny foothills of Provence over 15 years ago.
