Sucre’s Origins returns for the headline night of Soho Jazz Festival.

Join us Thursday 17 September for an evening of live Latin-influenced jazz, open-fire cooking and the energy of Soho after dark.

Curated by Soho Live, the programme brings together Latin rhythms, improvisation and contemporary sound, set against the backdrop of our Great Marlborough Street home.

Iberico Pork from from Belloterra, chimmichurri

For our Farm to Table series, we wanted to take a closer look at where some of our ingredients come from and the producers behind them.

Our Iberico pork comes from Belloterra, a producer based in Los Pedroches, Spain, with over 20 years of experience. Their pigs are free-roaming across the dehesa, feeding naturally on holm oak acorns and the surrounding landscape.

It’s this environment and diet that contribute to the flavour, marbling and character of the pork. Belloterra also maintains full traceability throughout the process, from breeding through to preparation.

At Sucre, we keep the preparation simple - cooking the pork over the fire and finishing it with chimichurri, allowing the quality of the meat to speak for itself.
