Our featured Quindio, Colombia is a great example of how coffee can have naturally expressive flavours beyond the familiar chocolate and nutty notes.
Grown in Colombia’s Quindío region, this coffee brings a bright, fruity character reminiscent of passionfruit, balanced by the soft, rounded sweetness of honey.
As our barista carefully pours water through the filter, we’re extracting those flavours from the ground coffee and bringing out its sweetness, aroma and clarity.

A special way to preserve rare and exceptional coffees for longer. Carefully stored in test tubes at a stable temperature and environment, helping protect their freshness, character, and unique flavours.
From carefully stored beans to the final brew, every step matters when it comes to bringing out a coffee’s true character.

Before brewing, we grind the coffee to control how quickly water extracts flavour from the beans.
A finer grind generally increases extraction, while a coarser grind slows it down.
That’s why grind size is one of the most important variables when dialling in a coffee.
The final step: extraction.
When hot water passes through freshly ground coffee, it dissolves hundreds of flavour compounds; from sweetness and acidity to bitterness and aroma.
Temperature, grind size, dose, water and brew time all work together to shape what ends up in your cup.
