Ahead of the competition, we’re hosting a special cupping evening to support him on his journey and celebrate the craft behind championship-level roasting.

When asks why coffee ?

“The infinite possibilities that coffee continues to offer attract and fascinate me deeply.

It feels as if I am looking at a simple cup of coffee, yet there is a universe behind it - disguised within layers of complex flavors.

There are so many interesting aspects to it: the stories behind traditional coffee farming, meticulous processing methods, original brewing techniques and recipes, the science of brewing and roasting, thoughtful café setups, collaborations, innovative equipment, and so much more.

However, especially the human connection that coffee fosters gives me a sense of purpose and hope. A delicious cup can bring us pure joy, which then transforms into a wonderful memory.
I would love to continue working with coffee to hopefully give people peace and light up their daily lives.”

For Mizuki, coffee is as much about feeling as it is about technique — a constant dialogue between craft and curiosity.

Thoughtful, precise, and quietly driven — Arang brings a calm focus to everything she does at Stag’s House Moorgate.

When asked why coffee ☕️ she said

“Was it just about making money? No, that didn’t feel true.

Even last Saturday, although I was exhausted, I still travelled almost an hour just to visit a cafe I wanted to go. The moment I realised that, I found my starting point. maybe the answer was in my everyday life.

To be honest, I’m quite a boring person. I don’t really have many hobbies. I rarely exercise, and I don’t live a particularly exciting life. But the one thing I truly enjoy is going to cafes.

On weekends, I usually visit at least two cafes, sometimes as many as four. Sometimes I go alone, and sometimes I go with friends. I never hesitate to pay for an expensive coffee, and whenever I visit a cafe, I read the menu at least three times.

Because the coffee I choose makes my day.

Normally, I drink a cappuccino made with fruity beans. On gloomy days, I go for something more chocolatey beans. On Sundays, I love drinking an Ethiopian cold brew. In summer, I enjoy a Colombian iced pour-over.

The choice of coffee makes my day feel wider, richer, and happier.

Even today, on a typical Monday morning, I was feeling a little low. I was working with that heavy monday mood when I noticed a Costa Rican batch brew had just finished brewing.

I took a sip to check the flavour, and it was incredible.

It had a rich, dark-chocolate body and acidity with the texture and sweetness of milk chocolate. If chocolate tea existed, I imagine it would taste something like that coffee.

My gloomy mood disappeared instantly, and it lifted my whole day. I found myself smiling through the rest of my shift.

Maybe that is why I work in cafe with my own quiet passion.

Because I want other people to experience the same kind of happiness that coffee gives me.

Meet Riley 👋

The calm in the chaos and a true craftsperson behind the bar, Riley is a key part of the team at Stag’s House Moorgate.

When asked “Why Coffee” Riley answered:

It all started with unfamiliarity. When I was in school, nobody really drank coffee, and becoming a professional barista wasn’t even on the list. Everyone was focused on paths like accounting, engineering or medicine - it’s simple, it’s direct, it can’t go wrong. But it simply felt cool to be different. Like many of you, I was first drawn in by latte art. The rest is history.

Coffee is one of the few things where small details make a big difference — a slight change in grind, temperature, or pour can completely transform a cup.

Coffee is fun and coffee makes me feel alive. There’s always something to taste, something to refine, something new to learn — which is rare in many other occupations. Everyday you can start all over, experiment and get a totally different cup of coffee.

But more than anything, I value the quiet moments behind the bar — focusing on the process, observing the coffee’s behaviour, and knowing that something I create might become a small but meaningful part of someone’s day.

Next time you’re in, make sure to say hi — and ask what she’s brewing.

From City Road, turn onto Whiston Road and continue straight until you reach Regent's Canal. Turn left onto Wharf Road and then turn right at the roundabout onto Kingsland Road. Take the first left onto Andrews Road and continue straight until you reach Empire Wharf Road. Street parking is available but limited. It is recommended to use a nearby pay-and-display car park.
