A new dish has landed at Paulette, and it’s a beauty. John Dory, baked gently with olive oil, lemon and herbs to keep it perfectly moist, served with a barigoule of baby artichokes — carrots, white onion, white wine, fish stock and a touch of mussel stock, all cooked down together. Simple ingredients, proper technique, and exactly the kind of dish Mamie would approve of. On the menu now. 🐟🌿
