Classic exists for a reason. The beef tartare at Josette is everything it should be — rich, sharp, deeply seasoned, served raw and proud alongside a tangle of shoestring fries.

No reinvention needed. Just very good meat, treated with the respect it deserves. Some dishes don’t need improving. This is one of them. 🥩

Mamie would wait all year for white asparagus. The brief window when they appear, pale and perfect, was always cause for a proper dinner.

We serve ours with a lemon mousseline espuma — something light, something bright, something that lets the asparagus do exactly what it should.
