St Ives squid, aged in a 5-day ice bath, served over warm nigiri rice and finished with caviar. The rice must be served at the right temperature to hold its structure. The 6-star Antonius Oscietra caviar adds salinity without overpowering.

MARU is built on the principles of kaiseki and omotenashi. Kaiseki guides the structure of the menu, shaped by seasonality and served in a considered sequence. Omotenashi is reflected in the way each course is prepared and presented directly by the chefs.
Each knife is used with purpose, depending on the cut and the ingredient.

To reach the restaurant in Shepherd Market, you can take public transport by taking the London Underground to Green Park Station, which is serviced by the Jubilee, Victoria, and Piccadilly lines. Exit the station and walk toward Piccadilly. Turn right on Half Moon Street and continue until it intersects with Curzon Street. Walk along Shepherd Market until you find the restaurant.
If driving, head towards Mayfair and park at nearby car parks like Q-Park Queensway or NCP Carrington Street. From there walk to Oxford Circus station and take tube to Green Park tube station. Cross over Green Park towards Half Moon Street then turn right onto Shepherds Market to your destination.
