I have just dropped off my second ever delivery to Upper Street and Blackstock Road.
Theo Makes Ice Cream at home by hand from simple ingredients. My mint choc chip ice cream is quite a rarity as I will only use fresh "chocolate mint" peppermint leaves (mentha x piperata f. citrata 'Chocolate' if you're interested) which you can't buy! So I have to grow it all myself in the garden and, this year for the first time, in the allotment. All the colour and flavour is entirely obtained from the freshly blended mint leaves.
I picked and froze them in the summer then they have to be blanched at 90C for a few seconds to prevent the enzymes from turning the leaves brown, then they are blended into the ice cream mix.

This is outdoor grown but early season so nice and thin and pink. I'm experimenting further with my efforts to create a kind of semi-preserved rhubarb chunk that isn't too icy but also not too sweet. I've cut the pieces smaller and will leave them to macerate for longer to try to achieve this.

Processing blackberries. Spread out in a single layer on a baking tray and freeze. Defrost in the fridge then blend and sieve. Blackberries have a lot of seeds and removing them is essential to the texture of good ice cream.
I then just blend with sugar and double cream (and one technical ingredient glucose powder for better texture).

I tried all the supermarket strawberries in Walthamstow.
The best are Scotty Brand from Asda.
Not as good as Hugh Lowe but I can't get any more of those til Thursday.
None of them are fantastic but a solid 3/5 for Scotty Brand.
