Guest Favourite: Cervaro della Sala 2022. Umbria, Italy

A world-class Italian white w**e known for its Burgundian elegance. It is partially fermented and aged in oak barriques, which introduces complex layers of ripe citrus, tropical fruits, vanilla, toasted nuts, and buttery notes, all balanced by a bright mineral core.

Because of its Burgundian-style weight, vibrant acidity, and buttery, mineral complexity, it requires flavourful, rich, and textured dishes.
