She might not be the prettiest pizza, but she’s glorious nonetheless. We spend 12 hours making a rich & soft beef shin ragu with red wine and a touch madeira, and then do what any other sane person would do - put it on a pizza and add bright pickled chilli, fresh mozzarella, tomato and lashings of aged parmesan. We make all of our fresh pasta every day, and extrude through bronze for rough edges that cling to sauces, and use a blend of Wildfarmed Grain and Gilchester’s semolina.
This is reginette - like a frilly pappardelle with mega sauce-catching frilly edges - just after being made this morning.
