A partridge always needs a little love and the right kind of accompaniment. The whole bird is roasted and basted in garlic and thyme and joined by steamed Jerusalem artichokes unctuously caramelised in dripping with roast red onion, tumbled in watercress, capers, parsley and mustard vinaigrette. We finish the dish with the pan sauce from the resting juices and very complimentary sherry vinegar.

You may well feel that this is premature. Forgive us. Each year, like the instinct of emigrating birds, the first chill in the air is accompanied by a flurry of emails all clamouring for news of one thing - our much-anticipated New Year’s Eve extravaganza. And so we are heeding that cry, with the release of tickets before even Guy Fawkes night has lit up the autumn skies.
At St. JOHN Smithfield the annual traditions persist - a glorious feast held at long tables and served convivially on generously heaped sharing platters, as befits such a jolly occasion. And then, after dinner, the lights dim and the bar is transformed into a dance floor, the disco ball twinkles, the band plays exuberantly and the Negronis flow until 1am, when your tired feet carry you home, sated and happy.
And what excitements to host our first ever St. JOHN Marylebone New Year’s Eve, a cornucopia of delights to set your intention for the year ahead. Perfect nibbles of Caviar and Potato Cake, Smoked Eel nestles in puff pastry and horseradish, and then the centrepiece - blushing Roast Goose, generously sauced and served with mashed potato rich with goose fat and garlic. The silky wobble of Crème Caramel makes the perfect end to your meal, the perfect beginning to your year. At Marylebone we are holding two seatings for the evening, the first of which is for those who are due at parties later, or who prefer to welcome in the New Year cosily enclosed in their bedsheets; the second of which allows you to see in the New Year along with us, glasses and spirits raised.

Rough-torn, crisp brown-butter-bathed bread strewn across a golden pan-fried Skate Wing. Scattered with capers and a wilt of wild garlic. Lunch.
Lifting the pale, melting strands from translucent, blushing bone requires attention. It forces concentration of hands, eyes and thought - no eyes on a book, no fingers on a phone, a pause in conversation. A meditative moment followed by a mouthful of pleasure.

Lunch at Marylebone: A puddle of white beans, their creaminess well-lubricated with good olive oil. A cloud of tangy goats’ curd, the sweetness of violet-tinted artichokes and a bright tangle of green leaves to lift and enliven. Potential.

Little burnished orbs! The papery rustle as the skin collapses beneath the pressure of your eager thumb, pressing out the sweet and melting interior. A soft and tangy bed of goat’s curd given structure by the crunch of good sourdough toast, and a mustardy muddle of mint leaves to brighten and lift.

A feast! A hands-in, bone-nibbling, spoon-scooping, full-glasses feast at St. JOHN Marylebone.
Gently squeeze the burnished papery skins of slow roasted shallots to reveal their fudgy interiors. Artfully layer the perfect bite of dark rye, zippy pickled herring, soothing creme fraiche and bright pops of caper (a tribute to Fergus’ beloved Tivolihallen in Copenhagen).
Suck the tender meat from the bones of the tender pork rack, with melting fat, toothsome crackling and a rubble of wine-braised fennel. Pour pools of vanilla-speckled custard to run in rivulets over bread-and-butter pudding, rich with layers of croissant and cinnamon bun.
At long last we are taking bookings of 8 or more. And those 8 or more people can look forward to these convivial sharing delights.
