The Carcass Club is back!
We'll be heading to Flat Iron Piccadilly on Tuesday, 22nd September to serve an exceptional carcass - White Park.
Unlike most breeds of cattle, the origins of White Park can be traced back many hundreds of years to the wild white cattle that once roamed the forests of Europe. Despite the challenges of the last thousand years, White Park are still grazing these lands, however the breed is incredibly rare. The animals are small and slow-maturing, preferring to graze well-established pasture rich in mixed grasses, wild herbs and flowers, which produces beef with a wonderfully complex, deep flavour.

On the hook in our Covent Garden butchery this week is this majestic dry-aged Dexter X Highland steer from Phil Martin.
The combination of breeds, coupled with nine years of grazing the woodlands of Essex, results in almost fluorescent yellow fat with a deep, pronounced flavour. What is gained in flavour is often lost in tenderness, but each animal we have had from Phil so far has beaten our expectations. This will hit our blackboards in Covent Garden later this week.

On the specials blackboard for a limited time: 450g sharing Wagyu ribeye from New Zealand.
Paired with creamed spinach, truffled macaroni cheese, crispy bone marrow garlic mash, roast aubergine and beef dripping chips.
Our sharing ribeye is available in all restaurants until we run out. Not available in Covent Garden, where we instead offer dry-aged specials from our butchery.

If travelling by public transport, the closest stations to James Street are Bond Street and Oxford Circus which are served by various Underground lines including the Bakerloo, Central, and Victoria lines. From either of these stations, it's a short walk to James Street.
If driving or parking, there are several pay-and-display car parks in the vicinity such as Cavendish Square Car Park and Q-Park Oxford Street. It's worth checking availability in advance as parking in this area can be limited. There are also several bus routes that serve James Street for those who prefer to travel by bus.
