Easter Recipe: Toasted Hot Cross Bun Chocolate Chip Cookies 🍪

After seeing the buttered toast cookies created by the incredibly talented , we were inspired to make them with hot cross buns for Easter 🐇

Using our chocolate chip cookie recipe from our Easy Vegan cookbook, we’ve adapted it to make these crunchy, perfectly sweet Easter treats.

Recipe:

Ingredients (makes ~16 cookies)
- 3 hot cross buns (halved)
- 300g plant-based butter (room temp - we use flora)
- 100g caster sugar
- 300g caster sugar
- 300g soft light brown sugar
- 1 tbsp vanilla extract
- 90ml soy milk
- 300g plain flour
- 240g strong white bread flour
- ¼ tsp bicarbonate of soda
- 1 tsp sea salt + extra flakes for topping
- 300g dark chocolate chips

Important trick: Chill the dough for 2 hours before baking for chewy middle and crispy edges.

Method
- Melt 25g plant butter
- Slice hot cross buns in half and brush with oil
- Pan fry (or pop in the toaster) until golden and crispy
- Add the hot cross buns to a processor to create crumbs and set aside
- Cream butter + sugars until fluffy
- Add vanilla + soy milk
- Mix in flours, bicarb, salt
- Fold in chocolate chips
- Fold in hot cross bun crumbs
- Sprinkle remaining hot cross bun crumbs on top
- Roll into logs, wrap, and chill for 2 hours
- Slice into rounds and roll into balls on a baking tray lined with baking paper
- Bake at 170–180°C for ~10–12 mins.

Enjoy!

What people say

Vegetarian and vegan restaurants have become increasingly popular in recent years, and Mildreds Restaurants on Street Martin's Lane in London is a shining example of why. With a menu full of delicious plant-based options, Mildreds offers something for everyone.

One standout dish is the Amba chick’n kebabs from the big plates section of the menu. These skewers feature mango yoghurt marinated chick’n, red pepper, cherry tomato, and onion served with tomato courgette orzo and tomato shaata. Another must-try is the sweet potato leek tortelloni, which comes with a creamy leek sauce and blanched leeks and broad beans.

For dessert, Mildreds does not disappoint. The textured vanilla crème brûlée with a glossy sweet raspberry compote and fresh raspberries is a crowd-pleaser. And for those looking for something new to try, the Jaggery panna cotta is a delicate spiced dessert that will leave you wanting more.

Mildreds also goes above and beyond by offering limited edition plant-based disco truffle balls made by their talented team of pastry chefs. 100% of the profits from these truffles are donated to Diversity Role Models, a UK-wide charity working with schools to end LGBTQIA+ bullying through educational workshops and role model storytelling.

Overall, Mildreds Restaurants is an excellent choice for anyone looking for delicious vegetarian or vegan food in London. With its diverse menu and commitment to supporting important causes, it's no wonder that this restaurant has become such a beloved destination for locals and visitors alike.
