The colomba, shaped as a dove, is traditionally shared at Easter as a symbol of renewal and the arrival of spring. Serve simply at the table, or serve as a pudding - layered with mascarpone cream and lemon curd, or warm from the pan served with ice cream and Birley Caramel Sauce.

Recipes:
Lemon & Mascarpone Colomba
You will need
• 1 Birley Bakery colomba
Mascarpone whipped cream
• 600g whipping cream (very cold)
• 120g mascarpone (cold)
• 30g icing sugar
Whip the cream, mascarpone and icing sugar together until thick and holding soft peaks. Keep chilled.
Lemon curd
• 170g caster sugar
• 100g butter
• 150g whole eggs (about 3)
• 20g egg yolk (about 1)
• Zest and juice of 4 lemons
Gently heat the butter, sugar, lemon zest and juice in a bowl set over simmering water until melted. Whisk the eggs and yolk together, then slowly whisk into the warm mixture. Cook over the bain marie for 10–13 minutes, whisking constantly, until thickened. Strain and chill.
To assemble:
Slice the colomba horizontally into three layers.
Place the cream and lemon curd into piping bags. Pipe alternating lines or swirls across the first layer so the two fillings intertwine.
Add the second layer of cake and repeat, then finish with the final layer.
Chill briefly before slicing and serving.

Any remaining mascarpone cream can be served with warm slices of colomba. Lightly toast a slice in butter, then finish with the cream - or a scoop of vanilla ice cream - and a spoonful of Birley Bakery caramel sauce.
